Si le menu n&rsquo;est pas encore tout \u00e0 fait boucl\u00e9 voici quelques petites id\u00e9es, l&rsquo;occasion de vous parler d&rsquo;un fruit de saison la ch\u00e2taigne !<\/p>\n<h3>Petite histoire &#8230;<\/h3>\n<p>Fruit du ch\u00e2taignier surnomm\u00e9 &lsquo; arbre \u00e0 pain\u00a0\u00bb, la ch\u00e2taigne \u00e9tait extr\u00eamement consomm\u00e9 jusqu&rsquo;au XIX i\u00e8me si\u00e8cle. En effet, la ch\u00e2taignier <em>Castanea sativa <\/em>est un arbre g\u00e9n\u00e9reux. Gr\u00e2ce \u00e0 ses racines pivotantes, le ch\u00e2taignier puise en profondeur l&rsquo;eau et les \u00e9l\u00e9ments min\u00e9raux dont il a besoin. En automne, il produit des bogues contenant 3 \u00e0 4 ch\u00e2taignes. Ces feuilles sont \u00e9galement utilis\u00e9es en phytoth\u00e9rapie pour leurs effets astringents, utiliser contre la toux, douleurs rhumatismales &#8230; mais parlons aujourd&rsquo;hui de son fruit.<\/p>\n<p>Cet arbre pousse sur des terrains acides, il est tr\u00e8s r\u00e9pandue en Rh\u00f4ne-Alpes, dans les C\u00e9vennes, Roussillon, Ard\u00e8che, Corse &#8230; Les castan\u00e9iculteurs d&rsquo;Ard\u00e8che ont obtenu une AOP Ch\u00e2taigne en 2014 et la farine de ch\u00e2taigne Corse a \u00e9t\u00e9 class\u00e9e AOP en 2010.<\/p>\n<h3>La ch\u00e2taigne est une mine d&rsquo;or pour notre sant\u00e9.<\/h3>\n<p>Elle est riche en :<\/p>\n<ul>\n<li>vitamines du groupe B ( B1, B6,B9) tr\u00e8s utile pour une bonne d\u00e9tox h\u00e9patique, pour la <a href=\"https:\/\/naturopathe35.fr\/index.php\/2020\/06\/14\/la-methylation-de-quoi-sagit-il-pourquoi-est-ce-fondamental-a-notre-bien-etre\/\" target=\"_blank\" rel=\"noopener\">m\u00e9thylation<\/a>, pour la fertilit\u00e9, les sportifs, la gestion du stress, contre la fatigue &#8230; Bref des vitamines indispensables comme toutes !<\/li>\n<li>en fibres qui apporte rapidement sati\u00e9t\u00e9 mais nourrit par la m\u00eame occasion une bonne flore intestinale et facilite le transit. Les fibres diminue le risque de cancer du colon et diminue l&rsquo;absorption du mauvais cholest\u00e9rol. Elle diminue \u00e9galement la charge glyc\u00e9mique et la s\u00e9cr\u00e9tion d&rsquo;insuline.<\/li>\n<li>en acides gras insatur\u00e9s, utile pour la sant\u00e9 de la muqueuse intestinale, diminue l&rsquo;inflammation et le risque d&rsquo;allergies.<\/li>\n<li>en min\u00e9raux en particulier le phosphore, magn\u00e9sium et le fer. et les gourmands !<\/li>\n<\/ul>\n<h3>Quelques recettes !<\/h3>\n<h3><span class=\"JsGRdQ\">COCOTTE DE L\u00c9GUMES ANCIENS ET CH\u00c2TAIGNES<\/span><\/h3>\n<p><span class=\"JsGRdQ\">Ingr\u00e9dients<\/span>:<\/p>\n<ul>\n<li><span class=\"JsGRdQ\">1\/2 potimarron<\/span><\/li>\n<li><span class=\"JsGRdQ\">1 boule de c\u00e9leri<\/span><\/li>\n<li><span class=\"JsGRdQ\">4 carottes<\/span><\/li>\n<li><span class=\"JsGRdQ\">2 panais<\/span><\/li>\n<li><span class=\"JsGRdQ\">4 navets boule d&rsquo;or<\/span><\/li>\n<li><span class=\"JsGRdQ\">8 topinambours<\/span><\/li>\n<li><span class=\"JsGRdQ\">1 bocal de ch\u00e2taignes<\/span><\/li>\n<li><span class=\"JsGRdQ\">3 gousses d&rsquo;ail<\/span><\/li>\n<li><span class=\"JsGRdQ\">Thym, romarin<\/span><\/li>\n<li><span class=\"JsGRdQ\">Bouillon<\/span><\/li>\n<\/ul>\n<p>Pr\u00e9paration:<\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">\u00c9plucher les l\u00e9gumes et les couper en petit morceaux. <\/span><span class=\"JsGRdQ\">Faire revenir un oignon dans un peu d&rsquo;huile d&rsquo;olive.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Ajouter les l\u00e9gumes ( sauf ch\u00e2taignes). <\/span><span class=\"JsGRdQ\">Faire cuire \u00e0 l&rsquo;\u00e9touff\u00e9e avec un peu de bouillon. <\/span><span class=\"JsGRdQ\">Ajouter les ch\u00e2taignes quelques minutes avant fin cuisson.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Garder les l\u00e9gumes l\u00e9g\u00e8rement croquants.<\/span><\/p>\n<h3><span class=\"JsGRdQ\">VELOUTE POTIRON-CH\u00c2TAIGNES<\/span><\/h3>\n<p>Ingr\u00e9dients:<\/p>\n<ul>\n<li><span class=\"JsGRdQ\">1 potimarron<\/span><\/li>\n<li><span class=\"JsGRdQ\">200g de ch\u00e2taignes<\/span><\/li>\n<li><span class=\"JsGRdQ\">+ ou -1L de bouillon selon la consistance souhait\u00e9e<\/span><\/li>\n<li><span class=\"JsGRdQ\">1 oignon<\/span><\/li>\n<li><span class=\"JsGRdQ\">Huile d&rsquo;olive<\/span><\/li>\n<\/ul>\n<p>Pr\u00e9paration:<\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Couper votre potimarron en morceaux\u00a0 <\/span><span class=\"JsGRdQ\">(personnellement je laisse la peau). <\/span><span class=\"JsGRdQ\">Faire revenir votre oignon dans un peu d&rsquo;huile d&rsquo;olive.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Ajouter le potimarron et le bouillon, laisser mijoter \u00e0 feu doux quand les l\u00e9gumes tendre ajouter \u00e9galement les ch\u00e2taignes. <\/span><span class=\"JsGRdQ\">Garder quelques morceaux pour la d\u00e9co. <\/span><span class=\"JsGRdQ\">Mixer au blender<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">D\u00e9guster<\/span> !<\/p>\n<h3><span class=\"JsGRdQ\">B\u00dbCHE OU ENTREMETS CHATAIGNES CHOCOLAT<\/span><\/h3>\n<p>Ingr\u00e9dients:<\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Pour la daquoise:<\/span><\/p>\n<ul>\n<li><span class=\"JsGRdQ\">150g de poudre d&rsquo;amande ou 125g amande et 125g noisette<\/span><\/li>\n<li><span class=\"JsGRdQ\">150g de sucre glace ( je prends du sucre de canne bio que je mixe au blender = sucre glace bio maison)<\/span><\/li>\n<li><span class=\"JsGRdQ\">5 blancs d\u2019\u0153ufs<\/span><\/li>\n<\/ul>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Pour la cr\u00e8me aux ch\u00e2taignes:<\/span><\/p>\n<ul>\n<li><span class=\"JsGRdQ\">350g de ch\u00e2taignes<\/span><\/li>\n<li><span class=\"JsGRdQ\">1 sachet de sucre vanill\u00e9<\/span><\/li>\n<li><span class=\"JsGRdQ\">30cl d&rsquo;eau<\/span><\/li>\n<li><span class=\"JsGRdQ\">10cl sirop d&rsquo;agave<\/span><\/li>\n<li><span class=\"JsGRdQ\">100g d&rsquo;huile de coco<\/span><\/li>\n<li><span class=\"JsGRdQ\">1 pinc\u00e9e de fleur de sel<\/span><\/li>\n<\/ul>\n<p>Pour la gel\u00e9e de fruits:<\/p>\n<ul>\n<li>500g de compote de fruit poire ou compot\u00e9e d&rsquo;orange + 5 gouttes d&rsquo;HE d&rsquo;orange<\/li>\n<li>2g d&rsquo;agar-agar<\/li>\n<\/ul>\n<p>Pr\u00e9paration:<\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Pr\u00e9chauffer le four \u00e0 170\u00b0, monter les blancs en neige, m\u00e9langer la poudre d&rsquo;amande avec le sucre glace puis incorporer les blancs. <\/span><span class=\"JsGRdQ\">Disposer la pr\u00e9paration sur une plaque de cuisson et cuire 20 \u00e0 30minutes. La p\u00e2te doit \u00eatre l\u00e9g\u00e8rement color\u00e9 et moelleuse \u00e0 la sortie du four.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Mettre les ch\u00e2taignes dans une casserole avec l&rsquo;eau et le sucre vanill\u00e9 ou gousse de vanille. Laisser mijoter pendant 10 minutes jusqu&rsquo;\u00e0 ce que l&rsquo;eau soit compl\u00e8tement absorber par les ch\u00e2taignes. Mixer avec l&rsquo;huile de coco, le sirop d&rsquo;agave ou de fleur de coco et la pointe de sel.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Pour apporter de la fra\u00eecheur vous pouvez r\u00e9aliser une gel\u00e9e de poire ou d&rsquo;orange pour glisser au milieu de la b\u00fbche ou de l&rsquo;entremets.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Prendre 500g de compote de poire ou d&rsquo;orange et y ajouter 2g d&rsquo;agar-agar.<\/span><\/p>\n<p><span class=\"JsGRdQ\">Faire l\u00e9g\u00e8rement chauffer 2 c\u00e0s de compote avec agar agar jusqu&rsquo;\u00e0 \u00e9bullition et ajouter au reste de la compote. Mettre dans un moule \u00e0 insert ou disposer au montage entre la daquoise et la mousse au ch\u00e2taignes.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Ce dessert peut-\u00eatre r\u00e9aliser en forme de b\u00fbche ou dans des cercles individuels sous forme d\u2019 entremets !<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Comme d\u00e9coration faire un gla\u00e7age au chocolat ou saupoudrer de cacao en poudre.<\/span><\/p>\n<p class=\"_04xlpA direction-ltr align-start para-style-body\"><span class=\"JsGRdQ\">Astuce pour un dessert rapide, \u00e0 la place de la daquoise, \u00e9mietter des biscuits (cr\u00eapes dentelles ou autres 200g) que vous m\u00e9langer avec du chocolat fondu (50g) et <\/span><span class=\"JsGRdQ\">de l&rsquo;huile de coco (50g).<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dernier weekend avant le r\u00e9veillon, vous \u00eates certainement dans vos derniers pr\u00e9paratifs !
