Comme souvent il est question d&rsquo;\u00e9quilibre, aussi si vous avez fait quelques \u00e9carts ces derniers jours ou si vous \u00eates un peu barbouiller, all\u00e9ger un peu votre syst\u00e8me digestif et prenez un bon bouillon !<\/p>\n<h3>Le bouillon Japonnais<\/h3>\n<p>Le bouillon miso fait partie de ces recettes \u00ab\u00a0m\u00e9dicaments\u00a0\u00bb. Un proverbe japonnais dit d&rsquo;ailleurs : \u00a0\u00bb il vaut mieux d\u00e9penser son argent dans le miso que chez le docteur!\u00a0\u00bb. Aliment traditionnel au Japon, il est fabriqu\u00e9 \u00e0 partir de haricots de soja ferment\u00e9. Ils poss\u00e8dent de nombreuses vertus th\u00e9rapeutiques.<\/p>\n<p>Il existe diff\u00e9rents type de miso selon le type de c\u00e9r\u00e9ales ou l\u00e9gumineuses utilis\u00e9 (riz, de soja, d&rsquo;orge, chanvre, bl\u00e9) Leur coloration d\u00e9pend \u00e9galement de la dur\u00e9e de fermentation et de la quantit\u00e9 de sel utilis\u00e9e. Plus le miso est ferment\u00e9, plus sa texture est ferme, sa couleur est fonc\u00e9e et son go\u00fbt est prononc\u00e9. Le miso est riche en prot\u00e9ines v\u00e9g\u00e9tales, en vitamines du groupe B, en enzymes, en probiotiques (processus de fermentation) et en antioxydants.<\/p>\n<h3>Les vertus du bouillon miso<\/h3>\n<ul>\n<li>Apport en prot\u00e9ines v\u00e9g\u00e9tales qui en associant avec de c\u00e9r\u00e9ales ou l\u00e9gumineuses permet d&rsquo;apporter tous les acides amin\u00e9s n\u00e9cessaire pour fabriquer des prot\u00e9ines compl\u00e8tes. Les prot\u00e9ines sont la charpente de notre organisme, nos neurotransmetteurs, nos enzymes, les cellules immunitaires sont des prot\u00e9ines. Nous ne stockons pas les prot\u00e9ines, il faut donc en apporter r\u00e9guli\u00e8rement en bonne proportion ( ni trop, ni trop peu 0,8 \u00e0 1,2g\/Kg de poids corporel en moyenne selon l&rsquo;\u00e2ge et les besoins).<\/li>\n<li>Facilite la digestion par son apport en enzymes naturelles de la fermentation qui participe \u00e0 la digestion des aliments.<\/li>\n<li>Favorise l&rsquo;\u00e9quilibre du microbiote car il est riche en probiotiques<\/li>\n<li>Renforce le syst\u00e8me immunitaire<\/li>\n<li>Pr\u00e9vention des cancers par son apport en antioxydants<\/li>\n<li>Riche en vitamines du groupe B indispensable \u00e0 la d\u00e9tox naturelle de l&rsquo;organisme, \u00e0 l&rsquo;\u00e9quilibre du syst\u00e8me nerveux et la sant\u00e9 cardio-vasculaire<\/li>\n<li>Facilite la sant\u00e9 gastro-intestinale<\/li>\n<li>R\u00e9g\u00e9n\u00e8re et participe \u00e0 l&rsquo;\u00e9quilibre acido-basique<\/li>\n<\/ul>\n<h3>Comment le pr\u00e9parer ?<\/h3>\n<p><em>Ingr\u00e9dients:<\/em><\/p>\n<p>&#8211; 20 de p\u00e2te miso<\/p>\n<p>&#8211; 750ml d&rsquo;eau<\/p>\n<p>&#8211; 1 \u00e9chalote<\/p>\n<p>-1 c\u00e0s d&rsquo;huile<\/p>\n<p>&#8211; 1 poireau<\/p>\n<p>-2 carottes<\/p>\n<p>-1 branche de c\u00e9leri<\/p>\n<p>&#8211; 5 c\u00e0s d&rsquo;algues du p\u00eacheur<\/p>\n<p>-4 champignons frais de Paris<\/p>\n<p>&nbsp;<\/p>\n<p>Couper l&rsquo;\u00e9chalote en morceaux et la faire revenir dans un peu d&rsquo;huile. Y ajouter les l\u00e9gumes couper en lamelles puis mettre l&rsquo;eau. Laisser mijoter pour cuire les l\u00e9gumes doucement et les garder \u00ab\u00a0al dente\u00a0\u00bb. Une cuisson douce permet de pr\u00e9server les saveurs et nutriments des l\u00e9gumes. Ajouter en fin de cuisson les algues et le miso. Laisser 4 \u00e0 5 minutes sur feu doux. D\u00e9guster un bon bol avant manger ou en guise de repas si vous avez trop manger.<\/p>\n<p>Et vous ?
